Doing 'Dark Days Chalenge' this year, are you?

Not Dabbling in Normal is hosting this years Dark Days challenge, it's about eating one meal a week (or more!) of SOLE foods. Sustainable, Organic, Local , Ethical. We can do that, right?

I wrote about my first attempt, and why it's important not just to ME, but to all of us, that at least some of us eat local!  I have a new blog, subRural alchemy, ENJOY!

This challenge sounds fun. I think its too late to sign up, but it's a good one to keep in the back of my mind when I'm eating this winter. Eating SOLE foods gets harder as the months get colder, but I look forward to working out some new recipes at home. I've made LOTS of soups this fall with leftover vegetables - my favorite so far...a butternut squash, carrot and apple with a dash of white wine and sage and thyme. YUM! Looking forward to potato soups, and more.
