Some foods taste best only when they're appreciated with an important person. My cousin's lovely lil girl recently graduated from high school, and is in a place of discovering the real flavor, taste, and health benefits of enjoying fresh vegetables and fruits. So we've begun to prepare a meal together here and there. I made artichokes for her a few days ago and she asked for them again.
So, we shared delicious artichokes with avocado dip & chips for lunch together..... keepable fabulous, incredible memories.....
First, we trimmed the artichokes at the base and also 3/4" at the top.
The artichokes steam for 45 minutes on the stove, so we added:
an inch-1/2" of water to a large pan with a lid
a couple Tablespoons of butter
a few thin slices of lemons (lemons go a long ways, so the thinner the slices, the more flavor)
After the Artichokes steamed, we moved them onto plates, then poured out a third or half of the water and added two avocados. The avocados cooked on the stove for 5 minutes, then were mashed with a potato masher while in the pot.
We refrigerated the dip while we digested our Artichokes with lemon butter and Voila!
