Scissors' Christmas Cookie Countdown-Chocolate Covered Cherry Cookies

24 maraschino cherries (drained; reserve juice)

1/2 cup butter, softened

3/4 cup brown sugar

1 tbsp reserved juice

1tsp vanilla extract

1-1/4 cup all purpose flour

1/8 tsp salt

1 pkg chocolate candy coating (ex. Almond Bark)

  1. Pat cherries to remove excess moisture; set aside. Combine flour and salt; set aside. In large bowl cream butter and brown sugar until light & fluffy. Beat in cherry juice and vanilla. Gradually add flour mixture to butter mixture; mix well. Cover and chill for 1 hour.
  2. Insert a chocolate chip into each maraschino cherry. Wrap a tablespoon of dough around each cherry. Place 1” apart on ungreased cookie sheet.
  3. Bake at 350 for 15-17 minutes or until set. Remove to wire rack to cool.
  4. Over double boiler, melt candy coating. Dip tops of cookie and place on waxed paper; let stand until set. Store in airtight container or freeze.

Yield: 2 dozen cookies
