Why roast bananas? BECAUSE it is easy, and awesome for making explode-in-your-mouth caramelized banana goodness. And that’s about all I have to say about that.
I didn’t set out to make these muffins gluten-free, they just turned out that way. I wanted to experiment in baking with homemade oat flour... I'm liking the texture, and it's so CHEAP compared to wheat flour. I have a local farm here who grows them organically and does her own processing, so no cross contamination, and so I can buy organic, gluten-free rolled oats for a mere 50 cents a pound.
