1 1/4 Cups Packed Light Brown Sugar
3/4 Cup Creamy Peanut Butter
1/2 Crisco Stick or 1/2 Cup Vegetable Shortening
1tbsp Vanilla Extract (we make our own)
1 3/4 Cup All Purpose Flour
3/4tsp Baking Soda
1 Bag Regular Sized Peanut Butter Cups(Reese’s)
Heat oven to 375 degrees.
Mix first 5 ingredients in a large bowl until well blended. Add egg, beat until blended.
In separate bowl, combine flour, baking soda, & salt. Add shortening to mixture and beat JUST UNTIL blended.
**Refrigerate for 15 minutes**
Shape dough into half-dollar sized balls (quarter size if using mini peanut butter cups). Placce 2″ apart on cookie sheet and bake for 9-12 minutes(less time for smaller cookies).
Remove cookies from oven and IMMEDIATELY place peanut butter cup on top of cookie. Let cool completely.
Scissors’ Notes: I usually double this recipe which will make about 42 mini up cookies or 36 regular size cup cookies.
