Homegrown.org Cook-Off Recipe Entry--Garden Surprise


I love this time of year and the abundance of vegetables at the table. But more than that, I like coming up with new ways to prepare them. Some way to mix them all together, make it pretty to look at, and pleasing to the palette.


Here is another one of our summer favorites--Garden Surprise.

We call it surprise because the ingredients will vary according to what is on hand.

This week we used cabbage, zucchini, carrot, and potato from the garden. Well, the carrots came from the local farmers market, but the rest was from our garden.





Dice 2 zucchini, 2 carrots, and  6 medium potatoes

Thinly slice 1 head cabbage

Brown 1 lb. of ground turkey (or whatever meat you have on hand)

While the meat is browning, add the potatoes and carrots.

When the meat is done, add the zucchini and cabbage

Season liberally with seasoning salt and a good dash of Braggs liquid aminos

Cook till cabbage is soft

Serve with a smile


This dish served our 6 hungry guys with sides of sliced tomato and cucumber, a fresh loaf of bread, and just made peach jam.
