It's Saturday after a busy work week and a day for some LAZY Day farm food.
Dinner is on my counter with Mason Jar Fresh Tomato Sauce and NO COOKING involved! Just add your ingredients, shake the jar and let it it out for 4-6 hours to marinate the delicious flavors~ the FLAVOR is anything but LAZY!
Mason Jar Fresh Tomato Sauce, NO COOK: by Lisa Stephens, adapted from Pasta with Fresh Tomato Sauce, Lucinda Scala Quinn 2005
Place the ingredients in a large Mason Jar, give it a good shake, serve 6-8 hours later over fresh pasta as your NO-COOK sauce! Also great as a bread dip, or bread topping, pizza topping….the list is endless.
¾ cup extra virgin olive oil
1 tsp. crushed red peppers flakes
4 cloves of garlic, crush whole clove with knife
½ tsp dried or 1 sprig fresh oregano
¾ cup fresh basil leaves, whole
Grape Tomatoes, Cherry Tomatoes, Baby Heirloom Tomatoes, or any fresh variety of tomato, broken into small pieces. ( I use about 6 medium tomatoes or 2 cups small grape size tomatoes.)
Coarsely ground salt and pepper to taste
Optional ingredients to add to your Mason Jar Tomato Sauce:
Whole kalamata olives, artichokes, thick slice of parmesan cheese, garden veggies of your choice.
Double the recipe for a full jar of goodness!!
