For proper digestion, grains, nuts and seeds need to be pre-soaked, including flour. Coconut flour, however, does not need to be pre-soaked because it is neither a grain or nut. Over the weekend, we soaked some organic rolled oats and decided to incorporate them in our new- simple to make- coconut cookie recipe.
