My husband found this recipe in the December 2010 issue of Rural Electric Nebraskan, which was submitted by Joan Ewing of Sidney, Nebraska. The full recipe makes approximately 5 dozen cookies.
Preheat oven to 375 F
1 cup powdered sugar
1 cup granulated sugar
1 cup butter or margerine
1 cup cooking oil
2 eggs, slightly beaten
4 1/2 cups flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1/2 teaspoon salt
1 teaspoon vanilla
1/2 cup sugar (to roll cookie dough before baking)
Cream sugars, butter (or margerine,) cooking oil, vanilla and eggs.
Sift together flour, soda, cream of tartar and salt. Gradually mix with dry ingredients.
Form about two teaspoons of cookie dough into a ball and roll in sugar. Place on non-greased cookie sheet and flatten with a fork.
Bake at 375 F for 10-12 minutes on middle oven rack.
