I'll be teaching an informal class on the basics of local food, including a guided trip through a NYC farmers' market. (Class info is here.) I'd love for the class and tour to be a success, and hope it encourages people to eat more sustainably.
Any tips or recommendations on what to cover, activities, etc.?

You could even do a trip to a local farm - I love the "get to know your farmers" side of buying local. It puts the "community" back into life. When you see the care and effort that goes into the food you eat, you appreciate it even more.
Also one of my favs about "local foods" are the wild edibles found in your own back yard or neighborhood. They provide both great nutrition and most have wonderful medicinal uses. All for FREE... Maybe do a neighborhood forage and see what you can come up with.
