The other morning I was looking in the freezer to take something out for supper and I found a bag of frozen turnip greens I had put up last fall that had gotten lost. I decided to make something for lunch with it. Here is what I threw together.
1 cup turnip greens
1/3 cup chopped onion
2 crushed garlic cloves
I sauted the onion, garlic, and sunflower seeds in about 1 tablespoon olive oil for about 5 minutes.
I then added the greens and sauted for a few more minutes.
I scrambled three small eggs (from my chickens starting to lay) and poured over all. Add salt and pepper to taste and cook until done.
I had it with a slice of homemade whole wheat bread. It was yummy and filling!!
