I was looking for a "healthy" version of rice pudding.  Initially all I found were recipes that substituted skim milk for whole milk or heavy cream.  Since my hubby and I completed our 21 day detox we have decided to severely limit our milk consumption. The recipe I finally settled on is vegan so no milk and no eggs (and LOW fat).

Just kidding :) I will try this! I love the idea of using coconut milk - was it too sweet?

It was pretty sweet but my husband likes sweet.  If I make it again I might cut out just a bit of the agave.  Not using milk is taking a bit of getting used to.  BUT...My husband has battled his allergies for years and it's like they have disappeared since we cut out milk (we only drank organic milk).  I don't have allergies and I miss my milk.

I have considered doing the same - I get horrible seasonal allergies and I know dairy exacerbates them. But, I LOVE cheese, milk, cream and butter too much. A terrible price to pay for a clear head :(
