Comment by Yvonne on February 2, 2012 at 12:42pm Caroline, here is a quick easy version of a mixed veg pickle by one of my favourite indian cooks, Madhur Jaffrey.
My guess is that the sames spice mix would work with the velvety texture of butternut squash, along with onions, parsnip root, rutabaga and maybe even carrot to create a lovely chutney; though I like "hot" so would maybe even add an additional sprinkle of dried red chilli flakes to get a hot, sweet pickle. The rutabaga might need a little longer to cook than the other ingredients? Def worth experimenting. I think I would even consider adding some cardamon or clove and tamarind paste as well.
