January 25, 2012. Andrea and I worked on perfecting the Hot Sauce recipe. We gave a call to Cornell Food Science and have begun the process of making sure we're doing everything the right way.
In 3 weeks we'll send our formula over to the good people at Cornell and they'll analyze the ph, check the shelf-life, and rate our overall performance (with respect to food safety).
There are about 15 friends who have volunteered to rate our performance with respect to taste and heat.
Either way it was fun. We were able to get US-grown Chilies from our local mom and pop produce supplier. But, I still can't wait to grow 30 lbs of my own Chilies to create the first batch of sauce to go to market!
