Steve Racz replied to Penny V.'s discussion 'Bread book recommendations for bakers of all skill levels' in the group BREAD!
"I swear by this one: http://www.amazon.com/Bread-Cookbook-Culinary-Institute-Staff/dp/0832605530 I bought it for about $0.60 about 20 years ago and it looks like now you can buy it used for $0.25. No kidding! It was originally published in 1976…"

"I've tried a couple of prototypes of using a rocket stove as an evaporator. Both are disappointing but I am heading in the right direction. it seems you really need to adhere to the design principles ( low mass burn chamber and chimney, equal…"

Steve Racz replied to HOMEGROWN.org's discussion 'Maple Tapping and Maple Syrup Making 101'
"Beautiful tree. It might be amusing but you might be disappointed by the results (sugar content is likely to be very low). It's the less than optimal tree to tap and the weather conditions are not ideal. There's a reason why all maple…"

Steve Racz replied to HOMEGROWN.org's discussion 'Maple Tapping and Maple Syrup Making 101'
"Will have 10 trees tapped this year - more next year if things go well and I can scale up (will have to see how much work 10 trees will produce). Still several weeks away here in western Quebec. I think 2 1/2" to drill into the tree is too…"

Steve Racz replied to HOMEGROWN.org's discussion 'DIY Seed Envelopes 101'
"Nice ideas but an even more appropriate technology version of this, which prevents the use of virgin paper, color ink,  power to run the printer, double sided tape (which is difficult to find and very expensive where I am) is to simply reuse a…"

Steve Racz commented on High Mowing Organic Seeds's blog post 'Seed Viability Chart'
"I've just recently successfully sown saved lettuce and tomato seeds which were both 6 years old and were not kept in any conditions as precise as suggested by High Mowing Organic Seeds so, I think YMMV and the above is probably a very informed…"

Steve Racz commented on jonmesser's group 'BREAD!'
""I have made bread for years, but recently got a Bosch." - I have no idea what that means! or why you are just now embarking on the journey to the perfect loaf.   The absolute best book I have ever found for bread is one I picked up…"

Steve Racz replied to Jennifer's discussion 'Breakdown the role of each ingredient' in the group BREAD!
"flour - glutinous mass water - to allow water to stick together. That's it really - those are the basics of bread.   If you want it to rise, then you need yeast and some form of sugar ( sugar, honey, molasses ) as the yeast needs something…"

Steve Racz left a comment for Torry
"Hi Torry, I'd gladly consider a swap. Postage to/from NZ is a bit of a nuisance but if we're swapping things which we otherwise couldn't get, it might just be worth it. I have an abundance of wood so the material costs of wooden…"
