How do you cure your sweet potatoes? I have read that they need to be cured at a very high temperature, which is a challenge in October in the Pacific NW. My crop last year was fairly successful, but they started to get soft in January (there weren't many left). I started my slips for this year from what I had left last year.
They go unwashed into a room we keep around 75 degrees for at least 10 days. Than we store them at room temp which for us is around 60F in winter.
Thank you. I think I can find a place in the house that I can keep at 75 degrees for a couple of weeks. The 60 degrees for storage is no problem.
