I pickle veggies once a week and call them salad toppers. I like cucumbers, peeled red bellpeppers, sweet onions, zuccini, and carrots layered with fresh garlic, herbs and then add a mix of red wine vinegar, white vinegar and a few table spoons of light tasting olive oil. Add little sea salt/fresh ground black pepper and a pinch of splenda blend.
