PENNY FOR HER THOUGHTS: Everybody, meet Penny, a self-described “aspiring country bumpkin” who is in the process of forging a more self-sufficient life with her husband in Washington State.
In emailing with Penny, we were lucky enough to learn a bit about her childhood growing up in Finland. “I spent a lot of my summers in the countryside, where my grandparents and my grandmother's parents have rented the same house, an acre of field, and fishing and hunting rights for almost a century,” she writes. “My grandparents lived through WWII and the rationing thereafter, so they smoked, canned, pickled, and brined everything they could grow, hunt, or forage for decades.
Now, that image of rural Finland is evocative enough. But what first caused Penny to catch our eye was something else entirely. Something a lot less picturesque but colorful nonetheless—not to mention timely in the days leading up to Thanksgiving.
Penny’s latest greatest homecooked meal? A “turkey beast.” Read that carefully, y’all. Penny explains: “I bought a turkey breast, but a misspelling in a message to my husband made it the epic turkey beast. It was delicious, with homemade cranberry sauce and a savory sweet potato casserole.”
