We had a bumper crop of potatoes this year and not the best storage space. So now we have potatoes in jars. This was my first time canning potatoes. Half the jars are Irish Cobbler and the other half Bintje potatoes. Getting more comfortable using my pressure canner. If you can potatoes, wipe your jars rims as you go. Otherwise it is hard to get the starchy potato off the rim.
