I was doing research for an article I was writing on Kombucha and stumbled upon a bunch of info on continuous brewing. Does anyone do that? Is it safe?

They sell these crocks to do it in and I thought only clear glass was safe. The friend who shared Kombucha with me gave me instructions from Betsy Pryor's Laurel Farms site. She's quite strict with her methods.

Just some things I'm thinking over.

I have been making Kombucha for a year now. I tried out the continuous brew method with the ceramic pot with a spigot and I didn't like it. It stopped the spigot up and the Kombucha gets too strong for my taste. So I went back to my regular way of brewing in my big vats. 

Would be interested in hearing if you went ahead, tried it and if it worked for you.
