I'm most looking forward to German red cabbage - start with a base of onions and good bacon, braise the cabbage til soft, add a little maple syrup, apple cider vinegar, cloves, cinnamon, allspice, salt and pepper. OH! During braising, I add thinly sliced apple over the top - it simply "melts" into the cabbage as it cooks. The liquor is best sopped up with the stuffing!
