In an effort to maintain our 'Eat only what you can pronounce lifestyle,' here is our blue cheese dressing adaptation:
2 egg yolks or 1 whole egg (use 2 yolks for thicker dressing)
3 oz or so of blue cheese (your preference)
1 tsp sea salt
1/4 tsp optional sugar
3 tbsp rice wine vinegar or lemon juice
1-11/2 cup olive oil
Place egg in the blender and add all ingredients except 1/2 oil.
Blend all ingredients until creamy. Add remaining oil while blending on slow speed until desired consistency.
