Sometimes it's just the variety of corn.  I don't can white corn, the truth is I don't really care for white corn.  This year I did can a bi-color and it's just so-so.  My family is not that thrilled with canned corn anyway.  I can it, because I can!  I use it for Mexican casseroles, corn fritters, Shepherds Pie...but to heat and eat the family would rather have fresh or frozen.

I brought it up to boil and boiled for 5 minutes before canning.  When I open a can, I can load it down with butter and sugar in the pot, but I didn't think that I'd have to do that to make it edible.  Maybe I'll try freezing next year.

I blanch and freeze, dehydrate and can lots of corn every year.  The frozen and dehydrated corn have the best flavor...the frozen comes fairly close to fresh.  Canned corn, well it tastes like canned corn!  I don't know why yours has no flavor...did you blanch before canning?

I canned sweet white corn the other day.  I microwaved an ear to taste-test it and it was good.  When it comes out of the jar, it has no taste.  Can someone tell me what happened?

I took my entries to the Central Carolina Fair today. I haven't entered anything in a fair since I was a kid, this ought to be fun! My group of friends usually go together every year, mostly for the rides and fried stuffs, but this year I will steer everyone over to the home goods and poultry!

Thank you, ladies, for the ideas on what to do with figs.
I think I,ll begin tomorrow with dehydrating and making fig bars.It will be my first time doing energy bars.

I've been dehydrating figs all last week and again this week.  I figure I'll work with them later this Winter.  I still have several jars of fig jam from last year, so didn't want to bother with that.  But Linda's paste sounds great..I think I may give that a try later this week.

Preserve figs in syrup, pickle them, or make them into paste. I make fig paste with ground almonds, lemon peel, cinnamon, and sometimes honey. It's the world's best energy bar!
