I took my entries to the Central Carolina Fair today. I haven't entered anything in a fair since I was a kid, this ought to be fun! My group of friends usually go together every year, mostly for the rides and fried stuffs, but this year I will steer everyone over to the home goods and poultry!

I canned sweet white corn the other day.  I microwaved an ear to taste-test it and it was good.  When it comes out of the jar, it has no taste.  Can someone tell me what happened?

I generally blanch and freeze mine so I can't help.  Sorry.

I blanch and freeze, dehydrate and can lots of corn every year.  The frozen and dehydrated corn have the best flavor...the frozen comes fairly close to fresh.  Canned corn, well it tastes like canned corn!  I don't know why yours has no flavor...did you blanch before canning?

I brought it up to boil and boiled for 5 minutes before canning.  When I open a can, I can load it down with butter and sugar in the pot, but I didn't think that I'd have to do that to make it edible.  Maybe I'll try freezing next year.

Sometimes it's just the variety of corn.  I don't can white corn, the truth is I don't really care for white corn.  This year I did can a bi-color and it's just so-so.  My family is not that thrilled with canned corn anyway.  I can it, because I can!  I use it for Mexican casseroles, corn fritters, Shepherds Pie...but to heat and eat the family would rather have fresh or frozen.

It's official.I will have a garden on my own next year.I am so happy.Finally I can grow all the fruit and vegetables I want to use for canning, myself.

Now I can dream, looking through seed catalogs and plan for next year,yuppie

I have been making ginger ale these days, tastes a bit alcoholic, is there anyway of testing how alcoholic? Also apart form the ginger and lemon is there any other fruits or spices worth adding?
