I came across a recipe that I thought may interest some people. It is called a rum pot, it is a traditional german recipe updated by the NSLC (Nova Scotia Liquor Commisson).
Get a big Mason Jar or other big canning jar and sterilize it.
Get some seasonal fruit and toss sugar with fruit-it should be a ratio of 2 parts fruit to 1 part sugar.
Let fruit stand for an hour.
Put fruit in jar (1 big one or individual ones-good for gift giving!!)
Top with white rum-the fruit must be completely covered, the rum acts as a preservative.
Place container (s) in a cool dark spot
You can continue to add more fruit as it comes into season, just make sure to do the toss with sugar thing first
Let sit for 4-6 weeks
The rum Pot will last indefinitly as long as the fruit stays submerged in the rum
You can use the fruit in almost anything, yogout, ice cream, drinks. or you can use just the liquid. The possibilities are endless!

I will have to try this. Sounds so much like the potted fruit my Great Aunt Suzanna (from Newfoundland) used to make. HA - she also said it was good for her arthritis, but added that it was a great sleep aid as well! Put a few of those fruits over ice cream and you betcha you will sleep.
